  • 3 lb finely ground beef
  • 1/2 cup bread crumbs
  • 1/2 cup whole milk
  • 3 egg yolks
  • 1 small onion, finely grated
  • 3 tsp salt
  • 1 pinch white pepper
  • 1 pinch ground nutmeg (optional)

Directions

  1. Combine milk and breadcrumbs, then add the egg yolks, finely grated onion, salt, pepper, and nutmeg. Mix well. Don't overseason with pepper or nutmeg — it should not be peppery at all.
  2. Mix in the ground beef and combine well (use your hands if necessary).
  3. Roll into small meatballs, no more than 1–1.5 inches in diameter.
  4. Fry in a medium-hot pan with butter until browned and cooked through. Makes 60–70 meatballs.
