- 3 lb finely ground beef
- 1/2 cup bread crumbs
- 1/2 cup whole milk
- 3 egg yolks
- 1 small onion, finely grated
- 3 tsp salt
- 1 pinch white pepper
- 1 pinch ground nutmeg (optional)
Directions
- Combine milk and breadcrumbs, then add the egg yolks, finely grated onion, salt, pepper, and nutmeg. Mix well. Don't overseason with pepper or nutmeg — it should not be peppery at all.
- Mix in the ground beef and combine well (use your hands if necessary).
- Roll into small meatballs, no more than 1–1.5 inches in diameter.
- Fry in a medium-hot pan with butter until browned and cooked through. Makes 60–70 meatballs.
