Swedish Cinnamon Buns

  • 5 oz melted butter
  • 2 cups milk
  • 1 tbsp yeast
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 5 1/2 cups flour
  • 1 egg yolk

Filling & topping

  • Soft butter
  • Sugar
  • Cinnamon
  • Pearl sugar

Directions

  1. Warm butter and milk to 98°F.
  2. Stir in yeast, sugar, salt, and 5 cups flour.
  3. Cover and let rise 45 minutes.
  4. Knead in the remaining 1/2 cup flour until soft and not sticky.
  5. Divide dough in half and roll each half into a thin rectangle.
  6. Spread with soft butter and sprinkle with sugar and cinnamon.
  7. Roll into long logs and cut into 1-inch slices.
  8. Place in paper wrappers, brush with egg yolk, and top with pearl sugar.
  9. Cover and rise again for 45 minutes.
  10. Bake at 450°F for 5–8 minutes.
