- 1 swedish ham
- 3 egg yolks
- 3 Tablespoon(s) sweet mustard
- 1 bread crumbs
- 2 bay leaves
- 20 black pepper corn
Directions
- Important: This recipe only works on a cured swedish ham, like you can get from Dittmers here in the Bay Area. A small ham is around 4lbs, and is good for 2-4 people, a larger ham would be 6-8lbs, which is for a good size party.
- Rinse the ham in cold water. Put it in a pot, and cover completely in cold water. Let it boil, and reduce heat to simmer. Skim the foam as needed, and let the ham boil, roughly 25-30 minutes / lbs (1 hour per KG).
- When the ham is done, take it out of the pan (carefully), and remove the holding net. Cut skin and excess fat, but it's good to keep at least a small layer of fat around.
- Whip the egg yolks and mustard, and spread it over the entire ham. Sprinkle bread crumbs lightly. Bake in oven for 15-20 minutes at 400, or until it get a nice color (not burnt).
