- 8 oz butter
- 1 1/4 cup sugar
- 3 tbsp cocoa powder (unsweet)
- 1/2 tsp vanilla extract
- 3 tbsp cold coffee
- 2 1/2 cups oat meal
- Nib (or pearl) sugar
Directions
- Combine the room temperature butter with sugar, mix well. Mix in all other ingredients. Roll into small (1-1.5") balls using hands. Roll into a bowl with the nib (pearl) sugar, to coat the chocolate balls lightly. See picture.
