- 1/4 cup Cottage Cheese
- 1/3 cup Mushrooms (chopped)
- 1/4 Green Bell Pepper (large, finely chopped)
- 2 tbsps Shallot (finely chopped)
- 57 grams Cheddar Cheese (grated)
- 4 Eggs
- Sea Salt & Black Pepper (to taste)
Notes
Made this in a bowl. Needed 2 1/2 minutes to set. Liked it though. Leftovers: Best enjoyed fresh. Refrigerate the raw ingredients in airtight containers for up to three days. Mix and microwave when ready to enjoy. Serving Size: 16 fl oz (500 mL) mason jars were used here. One mason jar is one serving. More Flavor: Add fresh herbs like dill, cilantro, or basil.
Directions
- Lightly grease the inside of each mason jar.
- Divide the cottage cheese, mushrooms, bell pepper, shallot, and cheese evenly among jars, filling each about halfway.
- Crack the eggs into each jar and add salt and pepper. Whisk gently with a fork to combine the ingredients.
- To cook, microwave one jar at a time for one to two minutes, or until the eggs are set. Enjoy!
