- 3/4 cup Cottage Cheese
- 2 tbsps Tzatziki
- 1 tbsp Fresh Dill (chopped, divided)
- 1/4 cup Cherry Tomatoes (quartered)
- 1/4 Cucumber (medium, chopped)
- 1/4 Orange Bell Pepper (medium, chopped)
- 1 tbsp Pitted Kalamata Olives (sliced)
- 1 tbsp Pumpkin Seeds (toasted)
- Sea Salt & Black Pepper (to taste)
Notes
Leftovers: Best enjoyed fresh. Serving Size: One serving is approximately one cup of cottage cheese and tzatziki with 1 1/2 cups of toppings. More Flavor: Add a squeeze of lemon juice or a sprinkle of smoked paprika. Additional Toppings: Chopped parsley, microgreens, and/or chickpeas.
Directions
- In a serving bowl, mix the cottage cheese with the tzatziki and half of the dill.
- Top with cherry tomatoes, cucumber, bell pepper, and olives.
- Sprinkle with the remaining dill and pumpkin seeds. Season with salt and pepper and enjoy!
