- ¼ cup almond flour
- 1 tablespoon milled flax meal (golden is best)
- 1 large egg
- 2 tablespoons sugar substitute
- ½ teaspoon baking powder
- 1 teaspoon melted butter
- ½ teaspoon ground cinnamon
- Buttercream Cheese Frosting:
- 6 tablespoons butter, softened
- 16 ounces cream cheese, softened
- 1 cup sugar substitute
- 1 tablespoon vanilla extract
Directions
- 1. Add all ingredients to a microwave-safe coffee mug, and mix with a fork until well combined.
- 2. Microwave for about 1 minute on high, or until batter rises in cup, and a toothpick stuck into the center comes out mostly clean. Microwaves vary, but 1 minute seems to be the minimum cooking time, so start there and add a few seconds, if needed.
- 3. Let cool 3 minutes before serving.
- For Frosting (12 servings): 1. Beat all ingredients in an electric mixer on high until light and fluffy.
- 2. Spread on a completely cooled cake or baked goods.
