Brown Rice Tuna Salad with Avocado & Feta

  • 1 cup Brown Rice (dry, rinsed)
  • 2 tbsps Extra Virgin Olive Oil
  • 1 Lemon (medium, juiced)
  • Sea Salt & Black Pepper (to taste)
  • 1 1/2 cans Tuna (drained)
  • 1/2 Avocado (medium, chopped)
  • 1 1/2 cups Cherry Tomatoes (quartered)
  • 1/4 cup Feta Cheese (crumbled)
  • 2 cups Baby Spinach
  • 1/4 cup Pumpkin Seeds (toasted)

Directions

  1. Cook the rice according to the package directions. Allow it to cool slightly.
  2. Combine the oil, lemon juice, salt, and pepper in a large bowl.
  3. Once cooled, add the rice to the bowl and toss to combine. Add the tuna, avocado, tomatoes, feta, baby spinach, and seeds. Divide evenly between bowls and enjoy!
