
Brown Rice Tuna Salad with Avocado & Feta

- 1 cup Brown Rice (dry, rinsed)
- 2 tbsps Extra Virgin Olive Oil
- 1 Lemon (medium, juiced)
- Sea Salt & Black Pepper (to taste)
- 1 1/2 cans Tuna (drained)
- 1/2 Avocado (medium, chopped)
- 1 1/2 cups Cherry Tomatoes (quartered)
- 1/4 cup Feta Cheese (crumbled)
- 2 cups Baby Spinach
- 1/4 cup Pumpkin Seeds (toasted)
Directions
- Cook the rice according to the package directions. Allow it to cool slightly.
- Combine the oil, lemon juice, salt, and pepper in a large bowl.
- Once cooled, add the rice to the bowl and toss to combine. Add the tuna, avocado, tomatoes, feta, baby spinach, and seeds. Divide evenly between bowls and enjoy!
