  • 1 zucchini
  • 1 cup Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp Italian seasoning

Notes

Original recipe calls for only 1/4 cup parmesan. I switched it to 1 zucchini (instead of 2) with 1 cup of parmesan. Maybe add a little more oil, but 1 tbsp seemed ok.

Directions

  1. Cut off the ends of zucchini, cut zucchini lengthwise in half, then cut each half in half, then slice zucchini into shape of fries.
  2. Put zucchini fries in a bowl and add olive oil, Parmesan cheese, Italian seasoning, salt and pepper. Toss until combined.
  3. Put zucchini fries in the air fryer basket.
  4. Cook zucchini fries in the air fryer for 10 minutes at 400F.
  5. If desired, sprinkle with additional Parmesan cheese before serving.
