Swedish Meatballs

3 Pound(s) finely ground beef

1/2 Cup(s) bread crumbs

1/2 Cup(s) whole milk

3 egg yolks

1 small onion

3 Teaspoon(s) salt

1 Pinch white pepper

1 Pinch of ground nutmeg (optional)


Combine the milk and breadcrumbs, add the eggs, the finely grated onion, salt, pepper and nutmeg, mix well. Don't overseas with pepper or nutmeg, it should not be peppery at all. Mix in the ground beef, and combine well (use hands if necessary).

Roll into small meatballs, no more than 1-1.5 inch in diameter. Fry in medium hot pan, with butter. This should make 60-70 meatballs.
