Swedish Chocolate Balls




8 oz butter

1 1/4 cup sugar

3 tbsp coco powder (unsweet)

1/2 tsp vanilla extract

3 tbsp cold coffee

2 1/2 cups oat meal

Nib (or pearl) sugar


Combine the room temperature butter with sugar, mix well. Mix in all other ingredients. Roll into small (1-1.5") balls using hands. Roll into a bowl with the nib (pearl) sugar, to coat the chocolate balls lightly. See picture.
