Strawberry Smoothie



Ingredients / Shopping List

8 medium strawberries (fresh or frozen)

1 large handful beet greens (optional)

4 cups spinach or mixed greens (or as much as you can fit in the blender)

1⁄4 cup beet (peeled and chopped)

3 tablespoons full-fat unsweetened coconut milk (if separated, use just the cream on top)

1 teaspoon pure vanilla extract

1 to 2 cups ice

Filtered water

Dash of pure stevia leaf


1. Add all ingredients to the blender along with enough water to facilitate blending.
2. Blend until smooth. Taste, and add a tad bit more stevia if more sweetness is desired.
3. Leftovers can be stored in the refrigerator for up to 24 hours.
4. If you’re still hungry, serve with hard boiled eggs, leftovers or other protein.


Left out the beets.
Used regular milk.
Probably used about 2-3 cups of spinach.

Looks gross, tastes really good. Served 2 of us.
