Ham and Spinach Frittata

6 large eggs

1 Tbsp butter

1 Tbsp olive oil

2 green onions, diced

2 cloves garlic, minced

½ (10-oz) pkg spinach

1 cup shredded Monterey Jack cheese

1 (8-oz) pkg diced ham, well drained

1 Tbsp fresh lime juice

1 Tbsp extra virgin olive oil

1 tsp honey

½ tsp Dijon mustard

tsp salt

tsp pepper

½ (5-oz) pkg spring mix


Preheat oven to 350°F. Beat eggs lightly in a large bowl; season lightly with salt and pepper.

Melt butter with oil in an 8-inch ovenproof skillet. Add onions and garlic; cook 2 minutes. Gradually stir in spinach until wilted and liquid is evaporated.

Pour egg mixture over spinach; stir in cheese and ham. Transfer skillet to oven, and bake 20 minutes or until center is set.

Whisk together lime juice, oil, honey, mustard, salt, and pepper. Drizzle lime mixture on greens in a bowl. Toss.
