1½ lb boneless, skinless chicken breasts
2 Tbsp olive oil
½ cup Buffalo wing sauce (such as Frank's)
2 (9-oz) pkg chopped romaine lettuce
1 (6-count) pkg hard-cooked eggs, cut into wedges
½ cup crumbled blue cheese
1 cup shredded carrots
¾ cup refrigerated yogurt Ranch dressing (such as Bolthouse Farms)
Preheat grill to medium-high heat. Rub chicken with oil. Grill chicken, covered, 4 to 5 minutes per side or until done. Cut crosswise into strips, and toss with wing sauce.
Place lettuce on a platter; arrange chicken, eggs, cheese, and carrots over lettuce. Drizzle with dressing.
Added bacon and it was really good. 1/2ed recipe for me and Leif.
Note: Add diced celery and grape tomatoes, if on hand.
