Cream Cheese Muffins




2 8oz packs cream cheese

1/2 - 3/4 cup sweetener

2 eggs

1/2 tsp vanilla

sprinkle with cinnamon before baking


Soften cream cheese about 40 seconds in microwave. Add other ingredients. Beat with mixer until smooth. Pour into 12 muffin pans lined with paper. Bake at 350 for 20 minutes. Refrigerate for a few hours.


These were really good, but felt weird after eating 2 of them, like wired at night. Only put in 1/2 cup sweetener, maybe drop it down a little bit more.
