Chocolate Peanut Butter Bars




4 oz cream cheese, softened

1 large egg

2 cups almond flour

1/2 cup natural chunky peanut butter

1/2 cup heavy cream

2 tbsp Swerve sweetener or coconut sugar

1 tsp vanilla extract

1/2 cup sugar free chocolate chips


1. Preheat oven to 350 º

2. In a large mixing bowl, using a hand mixer, mix the cream cheese with the egg until smooth.

3. To the mixing bowl, add almond flour, peanut butter, heavy cream, sweetener, and vanilla extract. Mix until all ingredients are well combined.

4. Using a rubber spatula, fold the chocolate chips into the mixture.

5. Transfer mixture to a non-stick 8x8 baking pan.

6. Bake for 20 minutes.


These were pretty gross, it's possible they weren't that good because I used Trader Joe's chunky peanut butter, but I didn't like them at all.
