1 head cauliflower
1/4 cup sour cream
2 Tbsp softened butter
1/2 Tbsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp black pepper
1/2 tsp salt
4 pieces of bacon, baked (or fried) and crumbled
1/2 cup cheddar cheese
Preheat your oven to 350 degrees.
Chop your cauliflower into large chunks, and put in your food processor. Using your multipurpose blade, run on high until all the cauliflower is chopped very fine, smaller than rice.
Scrape the cauliflower from your processor into a bowl and microwave for approximately 5 to 7 minutes until the ground cauliflower is tender.
Place back into the food processor with all your seasonings, sour cream and butter. Run on high again until the mixture is smooth and resembles mashed potatoes.
Put the mash into a piping bag fitted with the largest tip, and pipe rounds onto a baking sheet lined with parchment paper. If you do not have a piping bag/tips just spoon the mix onto the sheet.
Bake in the oven for approximately 20/25 minutes…until they are slightly firm and golden. Top with cheddar cheese and bacon, and place in the oven again for about 3 minutes until the cheese is melted.
