1 pound large peeled and deveined shrimp, tail-on
2 teaspoons fresh lemon juice
1⁄4 cup Parmesan cheese
2 tablespoons mayonnaise
2 tablespoons butter, softened
1 teaspoon chopped fresh parsley
1⁄4 teaspoon kosher salt
1⁄4 teaspoon Italian seasoning
1⁄8 teaspoon black pepper
Preheat the oven to 375°F and spray a 2-quart baking dish with vegetable oil spray.
Place the shrimp in the baking dish and drizzle with the lemon juice
Combine all remaining ingredients and evenly top the shrimp with the mixture.
Bake for 12 to 15 minutes, or until the coated shrimp start to brown. Serve garnished with lemon wedges, if desired.
Less salt, more Parmesan.
